It’s that time of the year again: pumpkins… pumpkins everywhere!
I used to dislike roasted pumpkins, but it was a few years back, when I was in elementary school, so I thought, I will give another chance to pumpkins. And it was a good decision.
There are plenty of recipes to choose from and sometimes it can be really overwhelming, and you just end up throwing the pumpkin away, because you can’t decide on which one to try first. Although, if that happens, just roast the pumpkin and blend it. It’ll be good for a lot of recipes later on and you can store it in the fridge or freezer.
My favourite breakfast recipes with pumpkin
Since the cold weather is coming, a warming porridge is really handy in the morning. The pumpkin and the cinnamon just gives a nice, cosy and autumny feeling for your breakfast.
This pancake recipe is my favourite, as you don’t need any fancy ingredients. Quick and easy. I also love the fact that she used spelt flour in the recipe.
This waffle recipe is kind of similar to the pancake one: no fancy ingredients, just basic things, that you most probably have at home. And the cashew cream is the bonus!
I remember the Sunday mornings, when my mum made french toast and hot tea for me and my brother. I haven’t had that nice french toast ever since. But these are almost as good (you know, your mum’s cooking is the best ever).
If you like meal prepping, this one is perfect for you. Just swap honey with maple or agave syrup and it’s vegan. This recipe is versatile, as you can add anything you’d like: raisins, goji berries, blueberries, chocolate chips, pumpkin seeds, sunflower seeds and so on.
