October is calling for pumpkin. I used to dislike it, but since I gave it another chance, I love it. Here I have collected all my favourite recipes, that I would use for a healthy and light lunch for busy workdays or even for cosy weekends.
My Favourite Lunch And Dinner Recipes With Pumpkin
A comforting pasta is good for busy workdays, because it is quick and easy to make. The pumpkin gives a nice creamy texture to the sauce. It’s a must try!
A burger is always a good decision. This pumpkin burger stays together, not dry and flaky. The pomegranate seeds are totally optional, but it gives a nice twist to the flavour.
If you like warm and spicy foods, this one is for you, but don’t worry, if not, because you can skip the chilli part. This dish is creamy, full of flavour and easy to make. You can also add chickpeas to the recipe for an extra protein boost.
This is not an ordinary salad, as it is filling and full with flavour. The chickpeas can be subbed with lentils (but don’t roast the lentils as you would do with the chickpeas). I personally wouldn’t use 4 tablespoons of oil for the chipotle sauce, but is totally up to you.
A warming soup when it gets colder outside? Yes, please!
You can decide whether you prefer it more on the watery or more on the creamy side. Mine was watery, but I prefer a creamy soup.
Pizza… Should I say more other than yes please!?
You can use the pizza dough recipe or buy a pizza base from your local shop, that way it’s even quicker. I love the roasted veggies and the caramelized onions on top.
There is also a pesto recipe, which can be used for other dishes, like pasta. However, I wouldn’t use that much oil as stated in the recipe, but adapt it to your preference.
I would like to quote the author, because it sums up everything:

The only thing that I usually change is the sweet potato, as it can make the dish quite heavy for the belly, but if you don’t have a sensitive stomach, go for the sweet potato.
Some say: ‘I can’t go vegan, because I love cheese too much!’. Now, my friend, you have an option for dairy-free cheese and it has pumpkin in it, which is a bonus.
You don’t need too many ingredients, and it is easy to make. Perfect for fall.
